This mildly spiked Strawberry Margarita Pie is such an easy recipe to put together, it will quickly become one of your favorite restaurant dessert recipes when you are entertaining, for Cinco de Mayo or anytime, especially during the Spring and Summer months.

Combine the decadence of a luscious fruit pie with the taste of a favorite cocktail and you'll have a long time happy marriage!

Note: Obviously, this strawberry pie is for adults only.

Strawberry Margarita Pie

Favorite Restaurant Dessert Recipe


Preparation time: 25 minutes. Serves 8.


Ingredients For Crust:

  • 1 3/4 cups graham cracker crumbs
  • 6 tablespoons sugar
  • 1/2 cup (1 stick) soft butter

  

Ingredients for Filling:

  • 2 cups fresh strawberries, hulled and sliced, + 8 fresh whole strawberries for garnish
  • 4 tablespoons sugar
  • 3/4 cup sweetened condensed milk
  • 1/2 cup + 1 tablespoon tequila
  • 6 tablespoons triple sec
  • 1 tablespoon fresh lime juice
  • 2 cups chilled whipping cream

 

Instructions:

  • Toss 2 cups of sliced strawberries with 4 tablespoons of sugar in a small mixing bowl and set aside

For crust:

  • Butter a 9 inch spring form pan
  • In a food processor, blend 6 tablespoons of sugar with cracker crumbs and butter
  • Press crumb mixture into the bottom and up the sides of your springform pan and smooth with a spoon

 

For Filling:

  • Puree strawberry and sugar mixture (from step one) with the sweetened condensed milk, tequila, triple sec and lime juice using a blender or food processor and then transfer to a large bowl
  • Whip the cream until soft peaks form
  • Fold 1/3 of the whipped cream into the strawberry puree then gently fold in the remaining whipped cream
  • Pour filling into the crust, cover and freeze until firm (at least four hours)
  • Remove from freezer 10 minutes before serving and garnish each piece with a whole, fresh strawberry and more whipped cream (and/or lime as "respect" for the tequila)
  • Cut the pie and serve

Note: Use a sharp knife dipped in hot water to cut the pie, wiping the knife with paper towels after each cut. Store leftover pie covered in freezer.
