Macaroni Cheese Recipe

Variation- Favorite Restaurant Recipe

As Good As Original !

Most people I know love the original Macaroni Cheese Recipe, but also enjoy a number of variations of the classic version. This meatless variation is very special.

This mac and cheese recipe is so good that restaurant customers cannot make up their minds whether they like the classic recipe or this one better.

The recipe was actually developed by someone who did not like a traditional Macaroni and Cheese Recipe so she experimented until she had one that was "just perfect" according to her.

She gave me the recipe and the restaurant offered it to their guests. Many agreed that it is a fabulous variation. It is creamy and uses three different kinds of cheese. It is now a real restaurant recipe and a favorite restaurant recipe.

Macaroni and Cheese, almost regardless of the variation, is a true comfort food for most Americans. It not only tastes good, it brings back wonderful memories.

It is a great side dish as well as a dinner or a satisfying lunch when served with an equally delicious salad or just tomato slices.

Variation - A Huge Success

Preparation time: 20 minutes. Serves 10

Ingredients:

  • 2 1/2 cups cooked macaroni
  • 2 cans cream of chicken soup (or 2 cans cream of celery soup)
  • 3 egg yolks, stirred
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon sea salt
  • 1/4 teaspoon white pepper
  • 3 cups total of shredded sharp Cheddar, Mozzarella and Monterrey Jack cheese combined (1 cup of each)
  • 1 cup of shredded cheddar cheese for topping the casserole
  • Panko (Japanese bread crumbs) or homemade bread crumbs for topping your mac and cheese (optional)

Instructions:

  • Cook pasta according to package instructions, drain in a colander
  • Preheat oven to 350 degrees F
  • In a large mixing bowl, combine the soup, egg yolks, sour cream, milk and salt and pepper
  • Add cheeses a little at a time to the soup mixture while stirring
  • Fold in the macaroni and pour the mixture into a 9 X 13 inch pan (or slightly smaller baking pan)
  • Sprinkle the top with the shredded Cheddar cheese (and bread crumbs if using); place the casserole in the oven and bake for 30 minutes or until heated through and the top has begun to brown and is beginning to get slightly crisp on top

Serve as either a side dish or as an entree. I really like tomato slices with this item. So will you!
