Vegetarian Pasta Recipe

Preparation time: about 30 minutes. Serves 2

 

Ingredients:

  • 1 1/2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 3 tablespoons onion, chopped
  • Salt and coarse black pepper
  • 1/3 cup zucchini, cut into "match sticks" or sliced very thin
  • 1/3 cup mushrooms, sliced
  • 1/4 cup tomatoes, chopped (and/or sugar snap peas)
  • Fresh basil to taste, chopped
  • Fresh parsley to taste, chopped
  • 1 tablespoon fresh lemon juice
  • 2 tablespoon toasted pine nuts (or other toasted nuts if you prefer)(optional)
  • 12 ounces linguine pasta, (or zucchini flavored linguine or fettuccine) cooked al dente’
  • Fresh Shredded Parmesan cheese for garnish

 

Instructions:

  • In a hot pan, place the olive oil, sprinkle in the salt and pepper, and sauté onion and garlic briefly (DO NOT BURN GARLIC)
  • Add the match stick zucchini and mushrooms. Cook briefly
  • Add lemon juice, basil and tomatoes, sugar snap peas if using, and linguine pasta
  • Sauté until heated thoroughly
  • Pour into pasta bowls  and top with toasted pine nuts and Parmesan cheese
