This restaurant recipe calls for walnuts, but that is optional. The bread is excellent either way.

Banana Bread Recipe

Preparation time: 20 minutes. Servings: 1 Loaf, 10-12 slices.


  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 3 very ripe bananas, mashed
  • 3 tablespoons buttermilk
  • 1 teaspoon baking soda
  • 2 cups unbleached all-purpose flour
  • 1/2 cup chopped walnuts (optional)



  • Preheat oven to 325 degrees F
  • Cream shortening and sugar in a mixing bowl
  • Add eggs, then add mashed bananas and then the buttermilk
  • Add soda and flour and blend well
  • Stir in chopped walnuts
  • Pour into a greased loaf pan
  • Bake slowly for one hour or until toothpick inserted comes out clean

Let stand 15 minutes before removing bread from pan

(Note): Using bananas that are very ripe is fine! Just cut the brown portion out. Using them for this bread is a long-time "tradition."
