Low Carb Veggie Salad

A simple, but simply delicious Vegetable Salad to put together quickly after a hard day at work.





Choose one or two different bell peppers to add more color to your salad. What great fun!

It doesn't get much easier than this, but you'll see (taste) why many people enjoy the comination of ingredients in this salad. This is a wonderful salad to enjoy when produce is at its freshest.

And for carb counters this salad recipe is what you're looking for. It only has about 8.25 grams of carbohydrates per serving, assuming a total of 10 servings. If you portion out 12 servings, you're down to only 7 grams!




Combination Veggie Salad Recipe
Delicious Low Carb Veggie Salad

Preparation time: 20-25 minutes. Serves 10-12

Cooking Conversion Table

Ingredients:

  • 3 tomatoes, coarsely chopped
  • 3 medium onions, coarsley chopped
  • 3 green bell peppers, coarsley chopped (or add color - not carbs - with yellow or orange peppers - or both!)
  • 1 tablespoon fresh parsley, finely chopped
  • 1 clove fresh garlic, minced
  • 1 teaspoon Sea salt or Kosher salt
  • 3/4 cup red wine vinegar
  • 2 tablespoons vegetable oil

    Instructions:

  • In a medium sized mixing bowl, combine the veggies
  • In a separate bowl, combine the oil and vinegar
  • Add the oil and vinegar to the vegetable mixture
  • Cover and refrigerate until serving
  • Correct seasoning and serve as is or over mixed salad greens
