Cream Of Tomato Soup Recipe

Comfort Food For Cool Weather

This Cream of Tomato Soup Recipe is one of those comfort foods we turn to when the weather turns cooler and wetter. A delicious tomato soup such as this one not only warms and comforts us, often it reminds us of simpler times in our past.

The soup recipe is quick and easy. It does not call for fresh tomatoes but if you have them, use them. This recipe uses tomato puree because the restaurant couldn't possibly keep up with the demand for the soup during the winter months if we tried to use fresh tomatoes.












Tomato soup is often served with a grilled cheese sandwich. It is almost a tradition for many Americans.




Cream of Tomato Soup
Preparation time: 10 minutes. Serves 6

Cooking Conversion Table

Ingredients:

  • 1 pound finely chopped onions
  • Vegetable oil for sauteeing onions
  • 1/4 cup sugar
  • 4 1/2 cups tomato puree
  • 3 tablespoons lemon juice
  • 1-2 cloves garliced, minced
  • 1/2 teaspoon Allspice
  • 1-2 Bay leaves
  • Salt and Pepper to Taste
  • 1 1/2 - 2 cups of half and half cream, scalded

    Instructions:

  • Saute onions in a little vegetable oil
  • Add sugar and cook until carmelized (light golden in color)
  • Add remaining ingredients except cream
  • Mix well and simmer for about 30 minutes
  • Stir in hot cream and heat but do not bring to a boil after adding the cream
  • Float a pat of butter on top and serve
