Avocado, Grapefruit, Oranges Enhanced With ...
A Delicious Avocado Mint Vinaigrette Dressing

Great color - of course. This somewhat unusual Fruit Salad Recipe uses avocado, grapefruit and oranges all brought to a happy union with an Avocado Mint Vinaigrette dressing.



Of course, visual appeal is a wonderful "plus," but this salad recipe is also delicious and nutritious.

The natural antioxidants and fiber found in a fresh fruit salad are a joy to your body and help keep it functioning well. And if you are a carbohydrate counter, this fruit salad has approximately 17 1/3 grams of carbs, assuming 6 servings. If you make 8 portions from this recipe, you're down to only 13 grams!

This recipe is not difficult, but to make the secret restaurant recipe for the avocado vinaigrette you'll first have to make a raspberry vinegar (recipe below) and allow the vinegar to "stand" for several days at room temperature. If you'd prefer to purchase a quality raspberry vinegar many larger grocery stores have it available.

Avocado, Grapefruit and Orange Fruit Salad Recipe
Preparation time: 30 minutes (plus the wait time for making the raspberry vinegar as noted). Serves 6-8

Cooking Conversion Table

Ingredients:

  • Leaf lettuce torn or cut (about 6 cups)
  • 2 avocados, peeled, pitted, and cut lengthwise into 8 pieces (dip avocado in lemon juice)
  • 1 grapefruit, peeled and sliced
  • 2 large oranges, peeled and sliced
  • 1 small red onion, chopped
  • Avocado - Mint Vinaigrette Dressing (recipe follows)

    Instructions:

  • Prepare raspberry vinegar (below) or purchase
  • Prepare Avocado - Mint Vinaigrette (below)
  • Dip avocados in lemon juice
  • Divide salad greens and then the fruit among 6 - 8 plates
  • Sprinkle with chopped red onion
  • Dress salads with Avocado - Mint Dressing and serve

    Avocado - Mint Vinaigrette Recipe
    Preparation time: 5 minutes. Makes 1 cup

    Cooking Conversion Table

    Ingredients:

  • 1/3 cup avocado oil
  • 1/2 cup raspberry vinegar (see below, or purchase at a larger grocery store)
  • 1/4 cup fresh mint leaves
  • 3/4 teaspoon salt

    Instructions:

  • Place all ingredients in a blender and process at medium speed until blended (about 30 seconds)




    Raspberry Vinegar Recipe
    Preparation time: 10 minutes. Makes 2 cups

    Cooking Conversion Table

    Ingredients:

  • 1 1/2 cups white vinegar
  • 1 cup raspberries, fresh or frozen without syrup

    Instructions:

  • Heat vinegar to boiling in a small stainless steel sauce pan
  • Meanwhile, place the raspberries in a clean, hot 16 ounce (1 pint) jar
  • Carefully pour hot vinegar into the jar of raspberries
  • Cover and let stand several days at room temperature in a dark place to allow the flavors to merge
