How about something easy, tasty, healthy and colorful for your plates? Cooked Carrots don't lose their nutritional value!

I believe that cooking (or over-cooking) some vegetables can reduce some of their natural nutritional value.

But research now indicates that cooking carrots results in increasing the antioxidant value of carrots (University of Arkansas).

What is needed, then, is a recipe for carrots that is flavorful. Here is one of several on this website that has worked well with restaurant guests. Plates are cleaned up at the table.


Sweet Cooked Carrots
Another Great Restaurant Recipe

Preparation time: 8 minutes. Serves 4-6 depending on desired portion.

Cooking Conversion Table

Ingredients:

  • 1 pound peeled, sliced carrots
  • 1/2 cup chicken stock
  • 3 tablespoons butter
  • 2 tablespoons sugar
  • 1/2 - 3/4 teaspoon salt

    Instructions:

  • Cook the carrots in a sauce pan with the chicken stock and salt over medium heat until crisp tender (don't over-cook)
  • Drain off the chicken stock
  • Add the butter and sugar and simmer until the carrots are lightly glazed
