Chocolate Mayonnaise Cake

Old Fashioned But Timeless Cake Recipe

This Chocolate Mayonnaise Cake Recipe is very old, even older than I am, but it is like some other recipes in that it is timeless. It remains a favorite restaurant dessert recipe.











It is comfort food because many of us remember our mothers making this cake when we were young children.

There are hundreds of variations of this mayonnaise cake recipe, but this cake recipe is exactly the same as my mother's when she was making birthday cakes for her daughters in the 1940's. It is a very moist and delicious cake recipe.

And as delicious as this cake recipe is, it is also so easy it should be one for moms to teach their children and grand moms to teach their grand kids.

The cake recipe does not call for eggs at all. The mayonnaise takes the place of eggs and oil (fat) so some people call this an eggless cake. I hestitate to do so because the fact is mayonnaise is made with eggs and oil.


Chocolate Mayonnaise Cake Recipe
Old Fashioned Favorite Cake Recipe

Preparation time: 10 minutes. Serves 9 (larger cake recipe below)

Cooking Conversion Table

Ingredients:

  • 2 cups of flour
  • 1 cup sugar
  • 1/3 cup cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cold water (or use cold coffee)
  • 3/4 cup mayonnaise
  • 1 teaspoon vanilla

    Instructions:

  • Preheat oven to 350 degrees F
  • Sift together the flour, sugar, cocoa, baking soda and salt
  • In another large bowl, combine the water, mayonnaise and vanilla
  • Make a hole in the center of the combined dry ingredients and add the mayonnaise mixture
  • Stir together until well blended
  • Pour into a greased, floured 9 X 9 inch baking pan or a 9 inch round cake pan
  • Bake at 350 degrees F for approximately 25-30 minutes or it tests done when a toothpick is inserted (toothpick comes out "clean")

    Cut and serve warm with whipped cream or serve with vanilla ice cream (and fresh strawberries or raspberries, if desired)


    Ingredients For Larger Cake:
    Preparation time: 10 minutes. Serves 16

    Cooking Conversion Table

  • 3 cups of flour
  • 1 1/2 cups sugar
  • 8 tablespoons cocoa
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1 1/2 cups cold water (or cold coffee)
  • 1 cup + 2 tablespoons mayonnaise
  • 1 1/2 teaspoons vanilla

    Instructions:

  • Same as above but use a 9 X 13 inch pan
