Most of these restaurant recipes are easy to make. And most recipes will freeze well.

This type of cookery has been around since prehistoric times, but in the twentieth century, these meals took on an American identity.

During the depression of the 1890s, this type of cooking provided a welcome way to stretch meat, fish, and poultry. Certain items were also scarce during World War I and leftovers were turned into full meals. The same was true during the Great Depression of the 1930s and again during WWII.

3 Cheese Macaroni and Cheese
The ultimate variation of the classic recipe! Preparation time: 20 minutes. 10 servings

Hoppin John
An adaptation of a Southern (USA) tradition on New Years Day for luck and wealth. Preparation time: 20 minutes. Serves 8

Spinach Casserole
This restaurant recipe is not only versatile (use lean ground beef, ground turkey or chicken), it is flavorful, quick and easy. In fact, if you and your family or friends do not eat all of it at one time, you can freeze what's left and when you reheat it at a later time it will still be excellent. Preparation time: 20 minutes. Serves 10

Sausage and Cheese Strata
Try this delicious restaurant casserole recipe for breakfast, lunch or dinner. It can be made ahead and baked the next morning. I have used this recipe successfully for banquets (large groups, self serve) many times. Preparation time: 40 minutes. Recipe serves 12.

Italian Sausage Lasagna
A favorite and classic Italian Sausage Lasagna Recipe with Italian sausage, tomato sauce, ricotta and mozzarella cheese is very easy and delicious. Preparation time: 45 minutes for cooking the sauce and pasta. Baking time is 65 minutes with a standing time of 10 minutes. Serves 8.

Potato and Cheddar Pie
This restaurant recipe for will satisfy appetites and taste buds for breakfast, lunch or as a dinner entree. Serve it with fresh fruit or a salad or fresh vegetable platter and for a finale, delicious brownies. Preparation time: 1 hour. 4-6 servings depending on portion desired.

Chicken (or Turkey) Pot Pie
This restaurant pot pie recipe is wonderfully flexible. You can substitute turkey. You can serve it as a pie or serve it over biscuits or even pasta.

You can also substitute diced potatoes and diced carrots in place of the mushrooms and red peppers. Preparation time: 45 minutes. Serves 6-8 depending on desired portion

Jambalaya!
A famous Cajun dish everyone enjoys. Preparation time: 45 minutes. Serves 4

Mexican-Style-Casserole
Make this delicious dish when you have left-over rice in the refrigerator or when you need a wonderful dish to take to a pot luck or barbeque. Preparation time: 30 minutes. Serves 8

Pasty Recipe
For those of you from the Upper Peninsula of Michigan or familiar with the U.P., guess what? I serve Cornish Pasties occasionally at the restaurant! You can prepare this pasty recipe as a pasty pie. Preparation time: 25-30 minutes. Serves 4.

Tamale Pie
This restaurant recipe for tamale pie is one of those I "go to" when I am pressed for time. It is delicious but it is very quick to put together and bake. With a little salad to accompany this casserole, everyone is happy. Some of my restaurant guests order it with a glass of beer and their favorite hot sauce. Preparation time: 15 minutes. Serves 8



Deep Dish Salmon and Potato Pie
You won't have to swim upsteam looking for a fabulous tasting baked salmon recipe from a restaurant. You found it!

This recipe is easily a "stand alone" meal but is especially good when enhanced with a salad or Cole slaw. Preparation time: 40 minutes. Serves 4-6 depending on desired portion.

Dungeness Crab with Cheddar Cheese
Dazzle your family and friends with this Dungeness Crab Dish for breakfast, brunch or lunch.

Serve this restaurant casserole with a variety of fresh fruits and sliced avocado or a wild green salad tossed with avocado and a light vinaigrette dressing (recipe on the website and in my e-cookbook).

Finish your meal with the strawberry rhubarb crisp for dessert! Sit back and enjoy the applause after the meal! Preparation time: 1 1/2 hours. Serves 12-15.

Spinach and Sausage Pie
Select your favorite sausage, one that will give the dish "the punch" you prefer. My personal favorite is a good Polish sausage. That is the way I make it to serve at my restaurant and the restaurant guests really enjoy it. Preparation time: 30 minutes. Serves 6-8 depending on portion.
